Winemaking

The grapes are handled gently, cut by hand and taken to the estate in small crates to ensure the quality of the crop is preserved. They are then sorted by hand, destemmed and put into tanks. Winemaking is still traditional at the estate, with no added yeasts.

After alcoholic fermentation, our wines spend between 12 and 18 months in French oak casks. Each vintage has its own specific qualities and requires very special attention. The percentage of new casks and duration of ageing therefore depend on the appellations and vintages. The wines are then bottled at the property.

The Crémant de Bourgogne appellation area stretches across the four departments of Burgundy. It covers approximately 1,100 hectares, an area that varies every year depending on the crop dedicated to other wines. Our Crémant de Bourgogne comes from a vineyard in the Côte de Nuits – there are very few Crémants left in Côte d’Or!
